Sheer Khurma is a delightful Mughlai dessert, made specially to celebrate Eid ul-Fitr and Ramadan. Imagine a creamy, rich pudding with fine roasted vermicelli, sweet dates, crunchy nuts, and the goodness of ghee—all simmered lovingly in milk. It’s no wonder that this traditional sweet treat holds a special place in the hearts of many across India, Pakistan, Bangladesh, and Afghanistan.

The name itself tells a story: “Sheer” means milk and “Khurma” means dates in Persian, perfectly describing the soul of this delicious pudding. Traditionally flavored with aromatic touches like rose water, saffron strands, or cardamom powder, every spoonful of Sheer Khurma is an indulgent experience.

Sheer Khurma (Semiya) Recipe

Ingredients

  • 1 Litre Milk
  • 2 TSP Clarified Butter
  • 8-10 Dry Sliced Dates 
  • Sliced Cashews
  • Sliced Almonds
  • Sliced Pistachios
  • Raisins
  • Sugar
  • 1/2 Cardamom Powder
  • 1/2 Kewra Water

Instructions

  1. 1st Pan: Take a pan and add 1 litre milk and make it boil for 3-4 minutes until it thickens.
  2. 2nd Pan: Now take another pan and add 2 TSP butter, let it melt, then add the dry dates and mix it well.
  3. Add all the sliced dry fruits in the pan and mix them properly and fry them for 2 minutes (keep a bit of dry fruits aside to garnish the recipe in the end).
  4. Add the fried dry fruits into the pan containing hot milk.
  5. Add sugar (as per your taste) and cardamom powder 1/2 TSP.
  6. Cook them on medium flame for around 4-5 minutes and keep mixing them.
  7. 3rd Pan: Take 3rd Pan and add butter, let it melt on medium flame and add crushed Sawaiya (Vermicelli) in the pan and fry it for 2 mins.
  8. Then add the sawaiya (vermicelli) in the hot milk containing dry fruits(1st Pan), mix them well and let it cook for another 6-7 minutes.
  9. Add kewra water.
  10. Now cook the whole recipe until you get the desired consistency.
  11. Take out the hot sheer khurma into any bowl or utensil and garnish them with the leftover dry fruits and dry rose petals.
  12. Now your Sheer Khurma (Semiya) is ready to serve to your family, friends and loved ones.

Notes

Pro Tip:

Add as much as dry fruits to make your sheer khurma rich in taste.

You can add condensed milk to thicken your sheer khurma and add more mithaas.

Serving:

Can be served to individuals in glass or cups.

Also can be eaten all together in a bowl with spoons that makes more love in between your loved ones.
