- 20 Kashmiri Red Chillies
- 10 Cloves of Garlic
- Ginger
- 10 Cloves
- 1 TSP Pepper Powder
- 1 Cinnamon Stick
- 4 Green Cardamoms
- 1 TSP Cumin Jeera
- 2 TSP Jaggery
- 1 TSP Salt
- 1 TSP Tamarind
- 1/2 Cup White Vinegar
- 1/4 Cup Coconut Vinega

Recheado Masala Recipe
Soak all the ingredients in the vinegar, and de-seed the Kashmiri chillies if you want less heat. Now, the chillies in 2-3 pieces and soaked in the vinegar in a glass bowl.
Add tamarin, ginger and garlic to the same glass bowl and keep them aside for an hour.
Put the onion on the stove directly and rotate the onion continuously for even roasting from all sides. Once the onion is charred, remove it from the stove and let it cool down for a minute, peel the black skin, slice it and pan fry it in a little oil until it gets golden.
Now put the red chillies, ginger, garlic and tamarind in the mixer from the vinegar bowl and do not discard the excess vinegar from the bowl.
With these ingredients, add roasted onion, cloves, pepper powder, cinnamon, cumin, turmeric, sugar and salt in the mixer.
Grind them well until they get a full paste form.
Taste the masala and adjust the salt, sugar and vinegar and balance the spiciness and tanginess as per your requirement.
Transfer the paste to the glass jar and store in the cold area, and it can last for months.
