Ingredients For Anda Dum Biryani
For the rice:
- Basmati rice – 1.5 cups (soaked for 30 minutes)
- Water – for boiling
- Salt – as needed
- Bay leaf – 1
- Green cardamom – 2
- Cloves – 3
For the egg masala:
- Boiled eggs – 5 to 6 (peeled)
- Oil – 3 TSP
- Onion – 2 large (sliced thin)
- Tomato – 1 medium (chopped)
- Green chilies – 2 (slit)
- Ginger garlic paste – 1 TSP
- Yogurt (curd) – ½ cup (whisked)
- Turmeric powder – ¼ TSP
- Red chili powder – 1 TSP
- Biryani masala – 1 TSP
- Garam masala – ½ TSP
- Fresh coriander and mint – ½ cup each (chopped)
- Salt – to taste
For layering:
- Fried onions – a handful
- Ghee – 1 TSP
- Saffron – a pinch soaked in 2 TSP warm milk (optional)
Step-by-Step Egg Biryani Recipe
Step 1
- Rinse and soak basmati rice for 30 minutes.
- In a pot, bring water to a boil. Add salt, bay leaf, cardamom, and cloves.
- Add soaked rice and cook till 90% done. Drain and keep aside.
Step 2
- Boil eggs and peel them.
- Prick each egg slightly using a fork.
- Optional: Heat a TSP of oil in a pan and lightly fry the eggs with a pinch of turmeric and chili powder for color and flavor.
Step 3
- Heat oil in a heavy-bottomed pan.
- Add sliced onions and sauté until golden brown.

- Add ginger garlic paste and cook for a minute until the raw smell goes.
- Add chopped tomatoes, turmeric, red chili powder, salt, and biryani masala.
