Easy Pav Bhaji Recipe

Step 1

    • Boil potatoes, peas, and cauliflower until soft.
  • Mash them lightly with a fork or masher.
  • Chop onions, tomatoes, and capsicum finely.

Step 2

  • Heat 2 tbsp butter and 2 tbsp oil in a large pan.
  • Add chopped onions and sauté until golden.
  • Add ginger-garlic paste and cook till the raw smell goes.
  • Add chopped tomatoes and cook until mushy.

Step 3

  • Add turmeric, chili powder, pav bhaji masala, and salt.
  • Cook till the oil starts to separate and the masala turns aromatic.

Step 4

  • Add the mashed vegetables and chopped capsicum.
  • Mix and mash everything well using a potato masher.
  • Add water gradually and keep mashing until the bhaji becomes thick and smooth.

Step 5

  • Add a little more butter for richness.
  • Let it simmer for 10 minutes on a low flame, stirring occasionally.

Step 6

  • Slit pav buns in half or you can use full buns.
  • On a flat tawa, melt butter and sprinkle a little pav bhaji masala.
  • Toast the pav until golden and crisp on both sides.

Step 7

  • Serve the bhaji with toasted pav, lemon wedges, chopped onions, coriander, and a cube of butter on top.
