How to Make Ana Bhurji
Step 1
- Chop onions, tomatoes, green chilies, and coriander.
- Crack eggs into a bowl, add salt, and beat them lightly.

Step 2
- Heat oil in a pan.
- Add onions, green chilli and sauté until golden, and you get an aroma.

- Add the ginger-garlic paste and cook until the raw smell disappears (you can leave the garlic paste if you don’t like it).
Step 3
- Chopped tomatoes, turmeric, chili powder, and salt are added to the pan with salt.
- Cook until the tomatoes turn mushy and the oil starts to separate from it.

Step 4
- Now, add the eggs that we have kept in the bowl to the pan.

- Keep the flame on medium and scramble the eggs continuously using a spatula or spoon.
- Stir frequently so the eggs cook evenly and don’t stick to the pan.
Step 5
- Cook it until it gets separated from each/ fully dried (or you can keep a bit wet, as per your preference), add garam masala and chopped coriander.
- Mix well, turn off the heat, and serve hot by garnishing with the coriander leaves or grating cheese.
